Beetroot Salad with Lemon

Especially now, in the fall, I love this fresh salad. Since I’ve discovered that the raw beetroot tastes delicious, it often is part of  my menu.

The salad is quickly prepared. The unpleasant thing is that the red colour of the beetroot is strong and it may dye your hands and bowls. To reduce this effect to a minimum I use household gloves while working with this vegetable.

You need:
Raw beetroot, amount according to your needs
Lemon
1-2 apples
Peeler
Bowl
Hand-grater or kitchen machine
optional: household gloves

Rinse the well-washed raw beetroot and the apples, and grate them into a glass bowl; like you do with carrots. I use my electric Zyliss machine to make it easier. This can also be done well with a hand held grater. I add  apples because it gives a pleasant flavour. Finally, I squeeze the lemon  and pour the juice over it. And ready it is; a fresh and healthy salad. It can be stored well in the refrigerator and tastes excellent even a day or two after preparation.
