Humus (chickpea spread)

Humus, vegan, without oil and super tasty!

For a long time I bought this oriental speciality until I dared to make it myself. The advantage of this is that I can determine what ingredients I use and which quality I want to eat.

You need:
250g chickpeas
2 lemons
3 cloves garlic
1 tablespoon tahin
cumin
pepper
salt
chives
cooking liquid of chickpeas
Vitamix or an other strong bar mixer
Sufficient jars with a screw cap

Put the chickpeas in a large bowl filled with water. Let it soak for 24 to 30 hours. During this time, wash the chickpeas several times in a salad sieve and change the water. After this soaking exercise wash thechickpeas one last time thoroughly in a salad sieve under running water. Then cook them in sufficient boiling salted water (enough to cover all the chickpeas) for one hour. Then you put the chickpeas together with the garlic cloves, the squeezed lemon juice, the tahin, the spices and herbs and enough cooking liquid (not all of it) into the mixer and then you start the engine. Make sure you use a powerful mixer. The mass gets sticky pretty quick. The humus is now ready! Fill it into the jars. Enjoy!
